Vegan Fried Green (and Red) Tomatoes

OK, OK, I’ve been tres lame on updating the old blogio. What can I say, running a home, a business, and preparing for becoming a foster parent is a bit trying. However, here’s a lil’ something to tide you over. Was talking to sister Dede this a.m. about her new low sodium diet and she […]

Mimi’s Freakishly Easy Garlic Fries

OK, folks, it doesn’t get easier than this. Think you have to fry fries? WRONG! Cut up a small potato, in french fry-sized pieces (duh!), toss in a little olive oil and garlic seasoning (I used Mrs. Dash’s Garlic & Herb blend, I heart Mrs. Dash), and arrange in a single layer on a George […]

Mimi’s Damn Good Vegetarian Maid Rite Wraps

OK, this recipe could only have come from me, a vegetarian from Illinois living in California. Growing up, of course I had plenty of diner comfort food, and there are some great establishments like Steak and Shake that I still love (for the fries and the atmosphere). My Mom loves this place called Maid Rite, […]

Mimi’s Pretty Good Fake Scrambled Eggs

OK, this recipe is not yet kick ass, but it was pretty good. I’m trying to be a vegan at home (at restaurants and parties it is almost impossible) and I’m trying to “let go” of eggs, which were a staple in my diet. I descend from Brits, so this is difficult for me. But, […]

Mimi’s Kick Ass Roasted Veggie Rolls

Every once in a while, you come up with a recipe that is more than the sum of its parts, in other words “kick ass.” This is such a recipe, and it’s vegan (I think–are flour tortillas vegan?). You can roast the veggies any way you’d like, but I found that a George Foreman […]

Yummy Vegan Pinwheels

4- 12 inch whole wheat tortillas
2- 8ounce packages of Tofutti cream cheese, at room temperature
2 green onions (scallions), minced
1/2 cup diced red pepper
1/2 cup diced celery
1 can pitted black olives, drained and sliced
1/2 teaspoon fresh herbs (such as parsley, dill or cilantro) * I used dill
fresh black pepper
In a large bowl mix all ingredients. Spread […]

Mimi’s “A Lot Better than it Sounds” Cole Slaw

1 c. grated cabbage
1 c. grated beets
1 c. grated carrots
1 c. broccoli, finely chopped
1/2 c. craisins
1/2 c. chopped walnuts
2-3 T. Mayonnaise, to taste (could probably use vinegar instead)
Mix and enjoy! If you use the red beets, rather than yellow or rainbow, I find it’s best–they are very moist. Try it, you’ll like it! I was […]

Marshmallow Fudge Recipe

(This recipe is from my friend Christine, who came to our Holiday Cookie Party this year.)
In a heavy pan add:
4 c. white sugar
1 12 oz. can evaporated milk
1/4 lb. butter
Boil this to a hard-ball stage (265° F using a candy thermometer, or when a tsp. put into a 1/2 cup of water forms a ball/hardens). […]
